St. Lucia's adventures climb. The Gros Piton hike is the crown — a guided 2,600-foot ascent (guides are mandatory and worth it) that runs two hours up through four ecological zones to a summit view over the island's south and the Caribbean beyond; start at 7am, before the heat, and the mountain is generous. Its sibling Petit Piton is steeper, scramblier, and unofficially climbed — most travelers rightly settle for photographing it. The rainforest interior adds the canopy circuit: zip lines above the Chassin forest, the open-gondola aerial tram gliding through the treetops, and waterfall hikes to Toraille and Diamond Falls.

The volcanic south is the strangest playground: Sulphur Springs bills itself as the world's only drive-in volcano, and the mud baths in its warm mineral pools — slather, bake, rinse — are equal parts spa and science experiment.
